Spiced Harvest Cake {Gluten & Sugar-Free}
Makes 2 mini loafs or 1 regular loaf
2 1/2 cups almond flour
1/2 tsp salt
1/2 tsp baking soda
1 1/2 tsp ground cinnamon
1 1/2 tsp ground nutmeg
1 1/2 tsp ground allspice
4 tsp ground ginger
3 eggs
1/2 cup honey
1/2 cup ghee, melted (or butter/oil of choice or applesauce as a vegan option)
Preheat oven to 350F. Combine dry ingredients in a bowl. Combine wet ingredients in a seperate bowl. Using a whisk or spatula mix wet and dry ingredients until combined. Pour into greased pan(s). If baking in mini loaf pans bake for 40 minutes. If tops begin to get too brown lay a sheet of foil on top to prevent burning.
Remove from oven and insert a toothpick in center, if it comes out dry they are ready! Allow to cool for one hour before removing from pan.
Serve with pumpkin jam or apple butter for a real crowd pleaser. Include a jar and wooden spreader with your harvest gift for a complete package. Decorate the gift box with natural wrapping materials such as burlap, butcher paper, twine, twigs, and leaves.
